Upon graduating from culinary school, I began working in a hotel banquet kitchen, where my initial job was to prepare hundreds of salads. After proving my dedication, I transitioned to the hotel's restaurant, where I developed my skills by searing scallops and crafting pan sauces, all while balancing a rigorous culinary school schedule. Upon graduating from culinary school, I began working in a hotel banquet kitchen, where my initial job was to prepare hundreds of salads. After proving my dedication, I transitioned to the hotel's restaurant, where I developed my skills by searing scallops and crafting pan sauces, all while balancing a rigorous culinary school schedule. My externship at the Ritz-Carlton reignited my passion for cooking when I volunteered to work at the sushi bar, a role for which I had almost no prior experience in Japanese cuisine. I learned quickly, enjoying the opportunity to interact with guests—including celebrities like Yao Ming and REO Speedwagon—as I perfected my craft. Though I appreciated the opportunity, the hotel's focus on lodging rather than cuisine eventually led me to a part-time job at Parallax, a new, buzzy sushi restaurant in Cleveland.
